Éban’s *Award-Winning* Gluten-Free Seeded Loaf
Chewy, soft and deliciously nutritious, Éban’s Award-Winning Seeded Bread is free of soy, wheat, dairy and preservatives, yet loaded with organic poppy, sesame, chia, flax, sunflower and pumpkin seeds that are baked into this substantial loaf along with free-roaming chicken eggs and Éban’s proprietary gluten-free, whole grain flour blend of brown rice, certified gluten-free oat, ancient grain sorghum and tapioca flours.
Like all of Eban's breads, the Seeded loaf holds up to the heartiest of fillings without requiring toasting and does not crumble or fall apart in the making of a sandwich. Three-Grain Sourdough Bread
This 3-grain sourdough bread is handmade with care and skill in small batches, using non-GMO, unbromated flour and locally sourced, high-quality ingredients.
The two- to three-day process from mixing to baking allows for flavor and texture to develop during the bulk fermentation process. Chef and owner Amy Wild explains,“We let nature and time do what dough conditioners and flavor additives do for commercial bread."
In addition, the sourdough fermentation process breaks down some of the starches and gluten in the bread, making it easier for the body to digest, reducing the likelihood of blood sugar spikes compared to non-fermented breads, and increasing the bioavailability of certain nutrients.
