Ingredients
- (2lbs) Beef Cubes
Directions
• 2 lbs J&L Green Farm Beef Stew/Cubes
• ¼ cup flour
• 1 tablespoon olive oil
• 1 large onion, quartered lengthwise, sliced crosswise
• 2 cloves garlic, finely chopped, or 2 tsp powdered garlic
• 1 teaspoon ground cinnamon
• 1 teaspoon ground ginger
• 2 teaspoons ground cumin
• ½ teaspoon coriander
• ¼ teaspoon cayenne pepper
• 7 oz can tomato paste
• 1 teaspoons salt
• 1 carton Chicken Broth
• 1 can (15 ounces) garbanzo beans, drained
• Cooked brown rice (or other hearty grain)
Directions:
• Put stew beef in a Ziploc and add flour, shake to coat.
• Heat olive oil in a skillet and add beef. Brown on all sides and remove to a bowl.
• Add spices, onions and carrots to skillet and saute until vegetables are slightly soft.
• Put beef and vegetables in crock pot.
• Add tomato paste, broth and garbanzo beans.
• Cook in crockpot on low for 8 hours or on high for 4 hours.
• Ladle over brown rice in bowls.
