A New Offering! Local Spring Raised Trout

We're hard at work doing off-season updates and planning for a new growing season that starts soon!

So today we thought we'd share a few photos from Smoke In Chimneys, the local Virginia farm and hatchery where one of our new product offerings, spring-raised trout, are hatched, raised, and harvested.

Smoke In Chimneys raises their trout in a 1930s gravity-fed earth-pond system that is supplied water by a covered artesian spring (pictured top) only 200 feet from the ponds (above).

The water that feeds their system runs at 1000 gallons a minute (!!) and is connected to one of the healthiest streams in Virginia according to Hollins University Biologists.

The result is a delicate fish that has a mild but clean flavor with nutty and buttery notes.

Trout are high in protein and loaded with Omega-3 fatty acids. They also contain plenty of B vitamins, niacin, phosphorous, and potassium.

They are easy to cook and taste delicious with almost any spice or breading combination...see our product page for a recipe and cooking instructions from the hatchery!
