Pork Loin Roast with Rosemary-Balsamic Marinade

Looking for an easy-but-special main course to serve to dinner guests or celebrate a special occasion or holiday? This is a great choice for grilling or roasting. Pairing Suggestion: Roasted Potatoes cooked with J&L Green Farm Pork Lard and seasonings, and sautéed fresh, in-season vegetables.

Marinade:

2/3 cup balsamic vinegar

1/3 cup olive oil

2 tablespoons coconut aminos (or soy sauce)

4 teaspoons J&L Green Farm Black Walnut Syrup, raw honey, or brown sugar

Real salt & black pepper, to taste

1/2 cup finely chopped fresh rosemary

5 cloves garlic, chopped

1 J&L Green Farm Forest-Raised Pork Loin Roast (2-3lbs)

Mix all marinade ingredients together. Pour marinade over loin roast, cover/seal and place in fridge for 12-24 hours.

If grilling, remove roast from marinade; reserve marinade. Cook on the grill until center is 170 degrees, brushing occasionally with marinade.

If baking, bake in oven with marinade at 325 degrees until center is 170 degrees (roughly 40 minutes per pound). Brush occasionally with marinade.
