Chicken Fat can be rendered into schmaltz - just like pork fat into lard or beef fat into tallow! While lesser-known, this pastured-animal fat is culinary gold, prized for its savory flavor in cooking or baking.
Great for those wanting more animal fat in their diet (like those on carnivore and keto meal plans)!
Render in a crockpot on low heat 6-8 hours or until most of the fat is liquid. Strain into wide-mouth jars and allow to cool. Freeze or store in your refrigerator. Schmaltz is a golden liquid while warm, but hardens into a soft, creamy yellow spread when refrigerated.
Try schmaltz in your pan while cooking eggs or sautéing vegetables, or as an oil swap for bread (or biscuit) baking for a rich crumb with amazing flavor! Some use it as a spread on bread or baked potatoes instead of butter.
